Heartbound

Ingredients:

(All amounts used are US standard and not something helpful - Sorry)

  • 15 lbs orange blossom honey
  • 1lb dried organic hibiscus flowers
  • 3.5oz peeled and chopped (3cm x 1cm variable ginger (for secondary)
  • .5oz cassia cinnamon sticks (for secondary)
  • 3.5+ gallons water
  • SNA, Aeration
  • 10g Lalvin 71B-1122 Yeast, rehydrated with 12g GoFerm in 170ml water (40C°)

Brewing Guidelines:

  • Target OG: 1.108
  • Measured OG: 1.110 (14.6% Potential ABV)

Nutrition:

  • 14.6g potassium bicarbonate prior to pinch
  • 5g calcium carbonate prior to pinch
  • 8.5g F-0 at Post Lag
  • Mix 5.6g DAP and 8.5g F-K, add a third at:
    • 1.100
    • 1.090
    • 1.080
  • Aerate twice daily until final nutrient addition

Instructions:

  1. Heat 3.5-4 gallons water to 65-70C° and steep hibiscus flowers using mesh bag for 2 hours. Keep temperature below 70C°.
  2. Cool tea to about room temperature and use for must water.
  3. Add ginger and cinnamon post-fermentation in mesh bag.
  4. Backsweeten to taste (expect: 1.020 - 1.030)

Notes

This recipe can take a long time to ferment. Batch 1 took us around 6-8 months overall. Probably could have fixed the PH sooner so would recommend just keeping an eye on the PH and adding potassium carbonate as needed.
